Buying local is very important and I believe that buying and knowing your local butcher and where they get their meat from is as important as finding a good hairdresser. I buy from Max at Burt Farms because of the quality of the meat. I use a lot of their beef, and the thin sliced strips that I use for stir fries are my favourite. No fuss or muss, they are ready to go. The following recipe is excellent with this meat.

The following recipes are just a guideline. You can add extra veggies like sugar snap peas, carrots, broccoli or cauliflower or whatever you like. If you like it saucier then simply double or triple the liquid amounts and season to taste.

 
ORIENTAL BEEF
1 lb beef, sliced thinly
1 tbsp sherry
1 tbsp soy sauce
1 tbsp water
1/4 tsp salt and sugar
2 tbsp cornstarch
3 tbsp olive oil
3 cloves minced garlic
1 tbsp fresh minced ginger
1/2 cup bean sprouts
1/2 cup sliced celery
1/2 cup sliced mushrooms
1/3 to 1/2 cup beef broth
 
Combine beef, sherry, soy sauce, water, salt, sugar, 1 tbsp cornstarch and 1/2 tbsp olive oil. Blend well and set aside.
Heat 1 1/2 tbsp oil and sauté garlic and ginger. Add beef mixture that has been set aside and stir fry until brown. Remove from pan.
Heat remaining oil and stir fry celery, mushrooms and bean sprouts for two minutes. Return meat mixture to pot and stir.
Mix beef broth and remaining 1 tbsp cornstarch and stir into meat mixture until sauce thickens.
Serve with rice or your choice.

 

RED PEPPER BEEF
1 tbsp wine or sherry
1 tbsp water
2 tbsp soy sauce
1/4 tsp salt and sugar
2 tbsp cornstarch
1 lb lean beef sliced thinly
2 tbsp olive oil
1/2 cup beef broth
3 cloves garlic minced
1 tbsp fresh ginger minced
2 large sweet red peppers cut into thin strips
1 small onion sliced thinly
 
Combine wine with meat, 1 tbsp soy sauce, water, salt, sugar, 1 tbsp cornstarch and 1 tsp oil. Marinate for 20 minutes.
Blend 1 tbsp soy sauce, 1 tbsp cornstarch and beef broth together. Set aside.
Heat remaining oil and sauté onion for two minutes and then add garlic and ginger and sauté, for another minute.
Add meat and stir fry for two minutes. Remove from pan. Add sweet peppers to pan, 1 tbsp water and salt. Cook for one minute.
Return meat and beef broth mixture to pan. Cook, stirring until sauce thickens.
