We are still in the month of January and how is everybody doing? Are we still on target with exercising, trying new recipes, eating less sugar and just plain cooking healthy? I have a couple of recipes for you to try and to keep you on the right path.
Beet Ginger Soup
This is a simple soup to make. You can either cook it in a pot on the stove or in your slow-cooker on low for 8 hours. If the soup is too thick after blending, add more vegetable stock.
- 4-6 large beets
- 1/2 head of cauliflower
- 1 medium onion, peeled
- 2 cloves garlic, peeled
- 2 celery stalks
- 1-2 Tbsp fresh ginger, grated
- 4 cups of low-sodium vegetable broth
Peel the beets and cut the vegetables into large pieces.
Place all the ingredients in a large pot and bring to a boil. Once it begins to boil, turn it down to a simmer and cook until the vegetables are tender about an hour.
Using an immersion blender, blend until smooth. Taste and add salt if needed.
Oatmeal Breakfast Cookies
In a hurry, out the door without breakfast, one of the cookies will keep you going. They are also great for a midmorning snack. Make a big batch and put some in the freezer.
- 3/4 cup dates, pitted and chopped
- 2 large ripe bananas, mashed
- 1 tsp cinnamon
- 1/8 tsp salt
- 1/2 cup unsweetened shredded coconut
- 3 cups large-flake oats
- 1/3 cup applesauce
- 1/3 cup honey or maple syrup
- 1 tsp vanilla
Preheat oven to 325°F.
Chop dates and set aside, mash bananas and set aside.
Combine oats, cinnamon, salt and coconut in a large mixing bowl.
Combine applesauce, honey and vanilla into a small bowl.
Add bananas and wet ingredients into the large bowl with the oats; gently stir until combined. Fold in chopped dates.
Pack the dough tightly into a large or medium sized ice-cream scoop. Place on a parchment-lined baking sheet, then press down gently.
Bake in the oven for about 25 minutes until the bottoms are browned. Remove and let cool on the cookie sheets completely before moving. They will break apart if warm.
Makes 8 large cookies.
