The following are recipes that you can use either for an appetizer or a quick dinner for family or friends.

 

Tortilla Stack
A simple and delicious crowd pleaser. I switched the Mozzarella cheese with Cheddar and Monterey Jack, which adds more flavour. Add a green salad and you have dinner.
 
1 lb lean ground beef
1 onion chopped
4 cloves garlic, chopped
1/2 tsp ground cumin
1/2 tsp chili powder
Sea salt and freshly ground pepper
2 cups sweet potatoes, peeled and shredded
1/2 cup cilantro, chopped
6 large whole wheat tortillas
2 tomatoes, diced
3 cups Mozzarella, shredded
 
  1. Preheat oven to 350°F
  2. In a large skillet, brown ground beef with onion, garlic, spices, salt and pepper
  3. Add sweet potatoes and cook 5 minutes. Remove skillet from heat and add cilantro.
  4. Place 1 tortilla on a baking sheet lined with parchment paper. Top with about 3/4 cup of meat mixture, 1/5 of tomatoes and 1/2 cup Mozzarella. Cover with another tortilla and repeat with the rest of tortillas; top with cheese.
  5. Bake in the oven for 20 minutes, broil for last 2 minutes if desired. Cut into wedges and serve with salsa and sour cream.
 
Cheese Ball
I call this cheating just a little. This is quick with bold flavours, perfect for a last minute appetizer. You can also substitute with any of the other flavours that Boursin has.
 
1 Boursin Cranberry & Pepper, softened
2 Tbsp cooked bacon (about 2 slices), chopped
1/4 walnuts, finely chopped
1/4 cup fresh parsley, finely chopped
1 Tbsp fresh chives, finely chopped
Crackers
 
  1. In a bowl, mix Boursin with bacon and nuts
  2. Mix herbs on a plate.
  3. Shape mixture into a large ball and coat with the herbs
  4. Chill at least 30 minutes. Serve with pretzel sticks, raincoast crisps or breadsticks.
