Garlic scapes are on and I have quite a few to pick. You can also buy them at the Wednesday Kagawong Market from Three Fork Farms. The following recipes are a start!

Grilled Cheesy Garlic Potato Packets

You can substitute any good melting cheese for mozzarella. Don’t be shy on the amount of garlic scapes! Make sure the foil is strong enough to hold the potatoes.

  • 6 medium potatoes, washed and peeled, if desired
  • Salt
  • Ground black pepper
  • Olive oil
  • Garlic scapes, cut into medium pieces
  • Mozzarella cheese grated
  • Green onions, chopped

Heat the grill to medium.

Thinly slice the potatoes and put them in a bowl. Add some olive oil, salt and pepper. Toss it altogether until the potatoes are coated in oil.

Place individual squares of foil on the counter and divide the potatoes between each foil.

Add a good quantity of garlic scapes and green onions over the potatoes. Close each packet tightly and grill on medium for 15-20 minutes, or until fork tender.

Carefully open the packets and immediately top the potatoes with cheese.

Let the cheese melt for a bit and serve immediately.

Garlic Scape Lemon Balm Pesto

This is great on a sandwich, pasta, seafood or your freezer for winter use. I keep mine simple by just using olive oil, lemon balm and garlic scapes and freezing them in 125ml jars.

  • 1 cup garlic scapes chopped into 1/2-inch pieces
  • 1/4 cup sunflower seeds or other nut of choice
  • 1/2 cup olive oil plus extra for topping
  • 1/2 cup fresh lemon balm leaves
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/8 tsp black pepper

Place the garlic scapes in the bowl of the food processor and pulse until they are broken down about, about 30 seconds

Add the nuts and pulse until they are combined with the garlic scapes. Scrape the sides of the bowl with a rubber scraper.

Turn the food processor to blend and slowly drizzle in the olive oil. Scrape the sides again.

Add the lemon balm leaves, cheese, salt, pepper and process until it reaches the desired texture.

Use immediately, store in the refrigerator or freeze for later.
